CSA Week #3

Another delayed posting on our CSA box for the week, all the dry weather is starting to have an effect on the corn crop at the farm. We got 7 ears this week, but will get none next week as a result. It was nice to finally get some rain this week, though I have been happy to not have to mow the lawn for a month.

This week we got more corn, yellow peaches, zucchini, cucumbers, onions and lettuce. New this week were nectarines, green beans and yukon gold potatoes.

If anyone out there in blog land is looking for a way to get rid of a bunch of zucchini, there are worse ways to use it up than this recipe... chocolate chip zucchini cake. I made a batch of this last week and it turned out awesome. I'll probably make some more tonight, since we still have some zucchini to use.

We have been using up the corn, onions, potatoes, and zucchini. I have way more fruit than I know what to do with. I have a ton of peaches and nectarines left, and we get more tomorrow. If anyone in NJ wants some let me know and we'll send some your way.

Today I made Dilly Beans, the recipe comes from one of my favorite canning blogs, Food in Jars. Its a green bean pickle, and they smelled great before I processed them. I'm looking forward to cracking open a jar in a few weeks and seeing how they turned out.

Right now I have a pot of lentil soup on the stove, we were able to use the rest of this weeks onions, and I tossed a chopped up zucchini in as an extra ingredient. This is a great recipe that we've made a few times before. This time the local grocery store didn't have turkey sausage so I made some myself from ground turkey, we'll see how it turns out.

Finally, we also had some basement waterproofing contractors in over the weekend, we have more coming this week. Hopefully by next week we'll be ready to roll with the first major home improvement project. I'm looking forward to this one, because we have all the money, I'm not sure what they heck we're going to do about the rest of the stuff we want to do. Hopefully we'll hit the lottery and it will become a moot point.
